what we ate wednesday...QEC meals for big fams...May 11,2011

(Meal 1...Jambalaya  Props to one of my bffs, Jenn, for sharing the wonder of Jambalaya with us! It is a gluten-free dream. The only ingredients are pictured above. Zatarains is my fav and it now comes with brown rice which is much better for you.You prepare the jambalaya as directed on the box , & at the same time, cook the gumbo veggies in a pan with a little evoo and garlic, then dump them along with the kidney beans into the pot, stir and you are done. I also heated up a smoked sausage link in the oven for those who wanted meat and I poured my serving over mixed greens for a salad. QEC and delicious! 3likes/1dislike, Honey LOVES)

Mealtime...the most stressful time of the day.
Actually, the meal part is awesome, it is the prep & clean-up that I detest.

I used to be so good at meal planning and I'd always have stuff on hand to whip up a quick lunch or dinner that was at least semi-healthy. I fell off that wagon in Arizona because it seemed like while we were there we were either unpacking, packing, arranging or rearranging. We have moved 4 times in the past 2 years.
{cut me some slack! anyone with kids knows how difficult moving is and cooking is the last thing you want to do}

Well, I am happy to say that I have jumped back on the wagon! I am sure my Honey is even happier about it than I am! Moving here has been so good for me in so many ways. I feel like I have been given my life back. Those two years in Arizona took it out of me! 

So anyway, I thought I'd try something new. Every Wednesday, I am going to post a few of our favorite quick, easy, and cheap meals. I am always looking for ideas and it seems like every time someone gives me their favorite cheap, easy, and quick recipe it ends up being NOT SO quick, easy, or cheap. Maybe they just have a different idea of what that means...like a 20 item ingredient list and an hour prep time, and under $15 is quick, easy and cheap compared to what they usually cook.

30 minutes and more than 5 or 6 ingredients is complicated for me, so when I say "quick, easy, and cheap, or QEC" I am talking 4 or fewer steps, less than 5 ingredients, and $6 or less for a family of 6. My recipes will all either be gluten-free or have a gluten-free alternative because I am gluten-intolerant.

Ezekial breads are not g-free, but many g-frees are able to tolerate them because they are made from sprouted living grains.) If I have to spell out the steps, I will, but it is pretty self-explanatory...piece of cake. 4 likes/0 dislikes, Honey likes)
